1Whisk together melted butter, light brown sugar, and granulated sugar to form a paste.
2Add one egg and vanilla and whisk until runny and smooth.
3Sift in plain flour, cocoa powder, bicarbonate of soda, and salt.
4Fold these in until just combined.
5Fold in milk, white, and dark chocolate chips.
6Refrigerate for 30 minutes.
7Scoop up two tablespoons of dough and place on a cookie sheet.
8Bake in the oven at 160C (fan) for 8-10 minutes.
9Let them cool for 15 minutes on the tray.

Tips
When the cookies come out of the oven, they will look puffy and underdone. Let them cool for 15 minutes on the tray before moving them. They will flatten and crinkle like in the photo.
