Strawberry Cheesecake Ice Cream
Directions
- 1Clean and cut the strawberries into smaller chunks.
- 2Add lemon extract and caster sugar to the strawberries, mix well and set aside.
- 3In a bowl, add sweetened condensed milk and vanilla extract and whisk until well combined. Set aside.
- 4In a separate bowl, add heavy cream and caster sugar, whisk until stiff peaks are formed.
- 5Add the condensed milk mixture into the whipped cream, folding it gently.
- 6Add the chopped strawberries and fold everything together.
- 7Layer the mixture in a loaf pan lined with parchment paper, starting with a layer of the cream mixture.
- 8Add the strawberry juice and swirl. Then add crumbled shortbread cookies and whole strawberries, repeating the process.
- 9Add a layer of cream, strawberries, and shortbread cookies again, and finish with a layer of cream, strawberries, and shortbread cookies.
- 10Wrap the pan and freeze for at least 5 hours or overnight.
