Berry Cake

Directions
- 1Cut parchment paper to fit the cake pan.
- 2Separate the eggs and beat the egg whites with a hand mixer, gradually adding sugar until stiff peaks form.
- 3In another bowl, whisk together the egg yolks and water.
- 4Gently fold the egg whites into the egg yolk mixture, then sift and fold in the flour.
- 5Pour the batter into the prepared cake pan and bake.
- 6Remove the cake from the pan and let it cool.
- 7Prepare the pastry cream by whisking together ingredients in a saucepan.
- 8Add butter and heavy cream to the saucepan and continue whisking.
- 9Mix strawberries, raspberries, blueberries and blackberries in a bowl.
- 10Cut the cooled cake into three layers.
- 11Assemble the cake by layering cake, pastry cream, and fresh berries.
- 12Decorate the top layer with whipped cream and fresh berries.
- 13Slice and serve.
