Stuffed Jalapeño Tacos with Ground Pork

Directions

  1. 1In a bowl, mix all of the seasonings, vinegar and the ground pork.
  2. 2Cook the pork until it reaches a minimum internal temperature of 160°F.
  3. 3Char the jalapeños until they are nicely soft.
  4. 4Cut a slit in the jalapeños and take out the seeds.
  5. 5Stuff the jalapeños with your favorite melting cheese and get the cheese nicely melted.
  6. 6Get your tortilla, the jalapeño and put the pork on it.
  7. 7Finish it off with some salsa, lime juice, cilantro and enjoy.

  • 4 LB Ground pork
  • 3 Tbsp Kosher salt
  • 2 Tbsp Black pepper
  • 0.5 cup Guajillo chili powder
  • 0.25 cup Paprika
  • 2 Tbsp Ancho chili powder
  • 1 Tbsp Garlic powder
  • 1 Tbsp Onion powder
  • 1 Tbsp Mexican oregano
  • 1 tsp Cumin
  • 0.25 tsp Ground cloves
  • 0.25 tsp Ground bay leaves
  • 1 cup White vinegar
  • Jalapeños
  • Melting cheese
  • Tortilla
  • Salsa
  • Lime juice
  • Cilantro

Tips

  • Let the pork sit with all the spices in the fridge covered for 24 hours before cooking for maximum flavor.
