Directions

  1. 1Prepare the Pico and guacamole.
  2. 2Place the Pico de Gallo in the fridge.
  3. 3Place the guacamole in the fridge.
  4. 4Wash and dry the potatoes.
  5. 5Dice the potatoes into small cubes.
  6. 6Add the diced potatoes to a large bowl.
  7. 7Add olive oil to the potatoes.
  8. 8Add taco seasoning to the potatoes.
  9. 9Mix the potatoes until well combined.
  10. 10Place the seasoned potatoes evenly on a lined baking sheet.
  11. 11Bake the potatoes at 425°F for 30-35 minutes.
  12. 12Add ground beef to a greased large skillet over medium-high heat.
  13. 13Break up the ground beef.
  14. 14Add taco seasoning to the ground beef.
  15. 15Add a bit of water to the ground beef.
  16. 16Mix and cook for 8-10 minutes, mixing frequently until done.
  17. 17Remove potatoes from the oven.
  18. 18Let the potatoes cool for a few minutes.
  19. 19Assemble your bowl with potatoes, ground beef, cheese, guacamole, pico de gallo, and sour cream.
