Directions

  1. 1Add all the ingredients together into a bowl.
  2. 2Using a wooden spoon, stir until a slightly sticky dough forms.
  3. 3Dust your work surface with flour and turn the dough out.
  4. 4Dust the top of the dough with flour.
  5. 5Press down with your hands to create a puck, the thickness being thicker than your finger (around 1 inch).
  6. 6Using the back of a wooden spoon, make quarter indents.
  7. 7Heat a skillet on a low heat and add the bannock, then cook on low heat flipping once until golden for at least 15 minutes, or bake in the oven at 180C Fan for 20 minutes.
  8. 8Serve with butter and optionally honey.

  • Oats (blended to flour texture)
  • 270 g Plain flour
  • 2 tsp Bicarbonate of Soda
  • 1.5 tsp Salt
  • 1 Tbsp Sugar
  • Honey
  • 375 ml Buttermilk
  • Flour (for dusting)
  • Butter

Tips

  • Many ways to make a Bannock, some with whole oats, some flat, or fluffy.
  • Traditionally cooked on the stove in a cast iron skillet, but can also be baked.
  • Serve with butter, soups (like Scotch Broth or Cock-a-leekie), jam, or honey.
