Serves 6

Directions

  1. 1Preheat oven to 425 degrees.
  2. 2Add 1 cup of buttermilk to a bowl and place it in the freezer for about 10 minutes to chill.
  3. 3Mix flour, sugar, baking soda, baking powder, and salt in a bowl.
  4. 4Melt butter in a small pot and allow to cool slightly.
  5. 5Combine chilled buttermilk and melted butter in a large mixing bowl, stirring until little clumps of butter form.
  6. 6Stir in cheddar cheese and chives.
  7. 7Gradually add flour mixture and mix until combined.
  8. 8Transfer dough to a floured surface and work with hands until fully incorporated, adding more flour if too sticky.
  9. 9Shape dough into a rough rectangle, fold in half, rotate 90 degrees, and repeat a few times.
  10. 10Flatten dough into a 1 inch rectangle and divide into 6 squares, trimming outer edges for better lift.
  11. 11Place biscuits on a parchment paper lined baking sheet and brush with remaining buttermilk.
  12. 12Bake for 15-18 minutes or until tops are golden brown.
  13. 13Serve topped with butter, a drizzle of honey, and flakey salt.
