Mix in the first round of onions (one large diced and one medium chunky) and pop on a low heat to soften, checking to ensure even browning.

Once onions have browned, add a tablespoon of ginger and garlic paste and let it brown on a low heat.

Add spices and let them heat for a minute or two on a low heat.

Stir in yogurt mixed with hot water to create a sauce.

Add 800 grams of chicken breast (or leg) and keep moving on a fairly high heat until all the chicken is sealed.

Stir in the juice of a lemon.

Reduce heat, pop a lid on, and leave it to cook until the chicken is almost cooked and has released water.

Add green chilies and the last lot of chunky red onions.

Give it a good mix and keep the chicken gently moving on a medium heat for the onions to separate and soften while the water evaporates.

Stir in coriander right at the end.
