Chicken Dopiaza

Directions

  1. 1Mix in the first round of onions (one large diced and one medium chunky) and pop on a low heat to soften, checking to ensure even browning.
  2. 2Once onions have browned, add a tablespoon of ginger and garlic paste and let it brown on a low heat.
  3. 3Add spices and let them heat for a minute or two on a low heat.
  4. 4Stir in yogurt mixed with hot water to create a sauce.
  5. 5Add 800 grams of chicken breast (or leg) and keep moving on a fairly high heat until all the chicken is sealed.
  6. 6Stir in the juice of a lemon.
  7. 7Reduce heat, pop a lid on, and leave it to cook until the chicken is almost cooked and has released water.
  8. 8Add green chilies and the last lot of chunky red onions.
  9. 9Give it a good mix and keep the chicken gently moving on a medium heat for the onions to separate and soften while the water evaporates.
  10. 10Stir in coriander right at the end.
