Directions

  1. 1Cook the rice vermicelli noodles, drain, and set aside.
  2. 2Boil your vegetables (baby bok choy, cabbage, water spinach) until they reach your desired tenderness, then set them aside. Reserve some of the hot vegetable broth.
  3. 3In a mortar, add salt, MSG, garlic, and pepper. Use a pestle to pound everything together until well combined.
  4. 4Transfer the sauce to a larger bowl or container, then add cilantro and some of the hot vegetable broth from boiling your veggies.
  5. 5Squeeze in fresh lime juice and add fish sauce to taste. Add sugar to taste. Give it a good mix, taste, and adjust the seasonings to your liking.
  6. 6Assemble the bowl by adding noodles, your choice of protein (nam sausage, seafood, meatballs, or pork meatloaf), and the cooked vegetables.
  7. 7Pour the flavorful sauce over everything, mix well, and enjoy.
