Directions

  1. 1Grate the carrots.
  2. 2Drain the crushed pineapple juice onto the raisins to plump them up.
  3. 3Crush the pecans or walnuts.
  4. 4Combine granulated sugar, brown sugar, vegetable oil, cinnamon, and vanilla extract in a bowl.
  5. 5Add eggs to the mixture.
  6. 6Mix the wet ingredients well with a hand mixer.
  7. 7Add all-purpose flour, baking powder, and baking soda to the wet ingredients.
  8. 8Mix the dry ingredients into the wet ingredients.
  9. 9Add the grated carrots to the cake mix and fold in.
  10. 10Add the drained pineapple to the cake mix and fold in.
  11. 11Add the plumped raisins to the cake mix and fold in.
  12. 12Pour the cake batter into a 9x13 pan.
  13. 13Bake in the oven at 350 degrees Fahrenheit for 45 to 55 minutes.
  14. 14Combine cream cheese and butter in a bowl.
  15. 15Mix the cream cheese and butter well with a hand mixer.
  16. 16Add vanilla extract and heavy cream or milk to the cream cheese mixture.
  17. 17Add icing sugar to the cream cheese mixture.
  18. 18Mix the icing with a fork until it is not messy, then use a hand mixer.
  19. 19Add half of the crushed walnuts or pecans to the icing and gently fold in.
  20. 20Spread the cream cheese icing over the cooled carrot cake.
  21. 21Garnish the top of the cake with the remaining crushed walnuts or pecans.
  22. 22Cut and serve the carrot cake.

Tips

  • Do all of your prep work first to make the recipe feel less overwhelming.
  • If you don't like raisins, leave them out, but also leave out the pineapple juice and just use drained pineapple.
  • If you don't want nuts, leave them out, no need for a substitution.
  • When making the icing, start off with a fork to mix the icing sugar with the cream cheese and butter to avoid a mess.
