Dice half of a red onion.

Open a can of chipotle peppers in adobo, take out one chipotle pepper, and cut it into little pieces.

Season two chicken breasts with salt, pepper, and sprinkle a taco seasoning packet over them, then rub it in.

Get a pot, set the temperature to medium-high, and drizzle in a little oil.

Once the pan is hot enough, sear the chicken for 4 minutes on each side; it doesn't need to be cooked through yet.

Once the chicken is out, lower the temperature to medium and add another teaspoon of oil.

Add the diced onions and sauté for about 3 minutes until they are see-through.

Once the onions are see-through and you can smell them, add four cloves of minced garlic.

Once you can smell the garlic, add the chopped chipotle and one tablespoon of adobo, and mix.

After 30 seconds, add one cup of uncooked rice and mix.

Let the rice sit for one or two minutes to toast.

Add two cups of chicken broth.

Add half a cup of enchilada sauce (green, red, or both).

Add one cup of rinsed black beans.

Nestle the chicken into the broth and bring it to a simmer.

Once you see bubbles, cover it with a lid and simmer on low for 15 minutes.

While everything is simmering, cut one cup of cherry tomatoes in half.

Keep the temperature low, take two forks, and shred the chicken directly in your pan.

Once the chicken is shredded, add the tomatoes.

Mix everything well.

Top it with half a cup of shredded cheese.

Cover your pan until the cheese melts.

Drizzle enchilada sauce over the top as the last step.

Tips
You don't have to cook the chicken all the way through yet because it will finish simmering with everything else.
You can use green or red enchilada sauce, or a little bit of both.
