Cheesy Fiesta Chicken and Rice

Directions

  1. 1Slice around a pound of chicken into cubes and throw it into a 9x13 pan.
  2. 2In a bowl, add 3 and 1/4 cups of low sodium chicken broth.
  3. 3Add two boxes of Mexican style rice-a-roni to the broth.
  4. 4Add one can of diced tomatoes with green chilies and the seasoning packets from the rice to the bowl.
  5. 5Season the chicken with Slap Ya Mama, onion powder, and garlic powder.
  6. 6Pour the rice and broth mixture over the chicken in the pan.
  7. 7Mix everything well, cover the pan, and bake at 375 degrees Fahrenheit for 45 minutes to 1 hour.
  8. 8Once the chicken and rice are about done cooking, heat up some queso.
  9. 9Take the rice out of the oven, fluff it up a little, and then pour the hot queso all over the top.
