Fruit Crumble Bars

Directions

  1. 1In a bowl, mix 1.5 cups of blueberries, 2 tablespoons of sugar, 2 teaspoons of lemon juice, and 1 teaspoon of corn starch.
  2. 2Mash some of the berries, leaving some whole, until they are juicy.
  3. 3Set the blueberry mixture aside.
  4. 4In a separate bowl, combine 1 cup of flour, 1 cup of oats, 0.5 cup of brown sugar, 0.5 teaspoon of baking soda, and 0.5 teaspoon of salt.
  5. 5Add a little bit of cinnamon if desired, it is optional.
  6. 6Add 1 stick (or half a cup) of melted butter and 0.5 teaspoon of vanilla to the dry ingredients.
  7. 7Stir the mixture together until it forms a crumbly dough.
  8. 8Take about two-thirds of the crumbly mixture and press it into the bottom of a pan to form the crust.
  9. 9Spread the blueberry mixture evenly over the crust.
  10. 10Sprinkle the remaining crumbly mixture over the top of the blueberry layer.
  11. 11Bake in a preheated oven at 350 degrees Fahrenheit for approximately 35 minutes.
