1Start by browning 3 pounds of pork breakfast sausage and add to a bowl.
2Add 2 blocks of softened cream cheese, 1/2 cup of diced white onion, 1/2 cup of diced green onion, 2 tablespoons of minced garlic, 1 cup of shredded pepper jack cheese, and your favorite barbecue rub to the bowl.
3Mix all ingredients together and add to a ziploc bag.
4Cut off the corner of the bag, and squeeze the mixture into your manicotti noodles until full.
5Wrap each filled manicotti noodle with bacon, trying to cover as much of the pasta shell as possible.
6Hit them with some barbecue seasoning and put in the fridge to soften for a couple of hours.
7Preheat pellet smoker to 275 and add the bacon-wrapped manicotti to the smoker.
8Close it up for about 2 hours until the bacon looks crispy.
9For the last 15 minutes, slather a sweet and spicy barbecue sauce all over the top of the shotgun shells.
