Directions

  1. 1Combine the ground beef, fat, small diced white onion, chopped green chili, chopped green bell pepper, chopped garlic, instant coffee, beef or chicken stock powder, black pepper, cardamom powder, nutmeg, cinnamon, smoked paprika, and baking powder in a bowl.
  2. 2Mix all ingredients together thoroughly. Jeremy recommends chopping everything by hand instead of using a food processor.
  3. 3Form the meat mixture into balls, each weighing 110 g (around 4 oz).
  4. 4Preheat the griddle.
  5. 5Apply a little beef tallow to the griddle.
  6. 6Place a meatball onto the preheated griddle.
  7. 7Place a tortilla on top of the meatball.
  8. 8Use a griddle press to smash the beef and tortilla together, ensuring the beef matches the tortilla's shape.
  9. 9Cook until a smash burger-like crust forms on the bottom of the beef.
  10. 10Flip the taco over to crisp the tortilla.
  11. 11Add cheese (like white American, cheddar, or Swiss) to the inside of the taco and allow it to melt.
  12. 12Once the cheese is melted, remove the taco from the griddle.
  13. 13Fold the taco.
  14. 14Prepare a spicy sauce using mayo, ketchup, and chilies.
  15. 15Add the sauce to the cooked taco and serve.
