Score the pork belly meat using a sharp knife, without cutting through the skin.

Mix the salt, sugar, black pepper, garlic powder, and five spice powder to create the seasoning rub.

Place the pork belly skin side down and rub the seasoning mix onto the meat, ensuring it gets into the cut surfaces.

If any seasoning gets on the skin, wipe it off with a damp paper towel.

Apply a pinch of salt to the skin and rub for a couple of minutes until the salt draws moisture out of the skin, then wipe with a paper towel.

Wrap the sides of the pork belly with tin foil, leaving the skin exposed.

Cook the pork in an air fryer at 250 degrees Fahrenheit.

Increase the air fryer temperature to 400 degrees Fahrenheit and fry until the skin is crispy and golden brown.
