Carne Guisada

Directions

  1. 1Peel the potato and cut it into cubes.
  2. 2Dice the peppers, onions, and tomatoes.
  3. 3Sauté the onions, peppers, and tomatoes for 4-5 minutes on medium-high heat until soft.
  4. 4Add 2 pounds of lean ground beef and the seasonings (chili powder, smoked paprika, ground cumin, oregano, black pepper, and salt) to the pan.
  5. 5Cook the beef mixture for 4-5 minutes on high heat.
  6. 6Add minced garlic and diced potatoes to the pan and mix well.
  7. 7In a separate container, add chicken bouillon and all-purpose flour to water and mix well until there are no clumps.
  8. 8Add the liquid mixture to the pan with the beef and vegetables.
  9. 9Cover the pan and allow it to thicken for around 12-15 minutes.
  10. 10Serve over Spanish rice and top with cilantro.

  • 2 lbs lean ground beef (90% or 85/15)
  • 2 tsp chili powder

  • 2 tsp ground cumin
  • 2 tsp oregano
  • 1 tsp black pepper
  • 2 tsp salt
  • 3 minced garlic cloves
  • 3 medium yellow potatoes cut into small cubes
  • 2 cups water or beef broth
  • 2 tbsp AP Flour
  • 4 tsp chicken bouillon
  • cilantro
  • Spanish rice
