Carne Guisada

Directions

  1. 1Place New Mexico chile pods and chile ancho in a small pot, cover with water, and bring to a boil.
  2. 2Transfer boiled chiles to a blender, add garlic cloves, tomato sauce, salt, and water, and blend until smooth.
  3. 3In a bowl, mix all-purpose flour, beef bouillon, oregano, garlic salt, ground cumin, black pepper, and salt.
  4. 4Slice steak into thin strips, coat thoroughly with the seasoning mixture.
  5. 5Heat vegetable oil in a pot over medium-high heat, add green bell pepper and onion, and sauté.
  6. 6Add seasoned meat to the pot and brown.
  7. 7Add roma tomatoes and diced green chiles, mix, and cook for a few minutes.
  8. 8Pour in the blended sauce, mix, and bring to a simmer.
  9. 9Reduce heat to medium-low, add bay leaf, cover, and cook.

  • 1 green bell pepper
  • 1/2 onion
  • 2 roma tomato
  • 7 oz diced green chiles
  • 1 bay leaf
