Directions

  1. 1Pour 1 gallon of milk into the Ninja Foodi.
  2. 2Select the "yogurt" function on the Ninja Foodi and set the temperature to 160-180°F.
  3. 3Once the milk reaches 160°F, slowly drizzle in 0.75 cup of white vinegar.
  4. 4Gently stir to break up the curds and let it sit for 30 minutes with the lid on.
  5. 5After 30 minutes, use a slotted spoon to remove the curds from the whey.
  6. 6Place the curds into a cheesecloth-lined strainer to drain for another 30 minutes.
  7. 7After 30 minutes, gather the cheesecloth, gently squeeze to remove excess whey, and rinse under cool water.
  8. 8Remove the cottage cheese from the cheesecloth and place in a container.
  9. 9Add salt to taste and optionally add a couple of tablespoons of heavy whipping cream for a creamier consistency.
