Directions

  1. 1Boil macaroni in some salted water until al dente.
  2. 2Dice steak into cubes.
  3. 3Add paprika, salt and pepper to the steak cubes and mix well.
  4. 4Cook the seasoned steak in a pan on high heat with cooking spray for 45 seconds per side until crispy.
  5. 5For the mac and cheese sauce, mix low fat milk, light cream cheese, parmesan, half a chicken stock cube, half a teaspoon of salt, half a teaspoon of pepper, and 1 teaspoon of garlic powder in a blender.
  6. 6Blend the sauce ingredients until smooth.
  7. 7Pour the blended sauce into a pan.
  8. 8Add 1 teaspoon of paprika and a quarter teaspoon of turmeric for color to the sauce in the pan.
  9. 9Stir the sauce on medium heat until it thickens up.
  10. 10Add the cooked macaroni and a splash of pasta water to the sauce.
  11. 11Mix well until it sounds like a squishing noise.
  12. 12Finish by adding cheddar and mozzarella to the macaroni and cheese mixture to make it nice and cheesy.
  13. 13Serve one-fourth of the mac and cheese with one-fourth of the seared steak bites on top.
  14. 14Box the rest into meal prep containers.

  • 150 g light cream cheese
  • 10 g parmesan
  • 0.5 chicken stock cube
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.25 tsp turmeric
  • 40 g low fat cheddar
  • 40 g grated mozzarella
