Serves 10

Directions

  1. 1In a bowl, add two cups of masa harina, one teaspoon of salt and mix well.
  2. 2Slowly add one and a half cups of warm water and mix until it looks like sand.
  3. 3Keep adding more water until all the masa is well hydrated and has a play-doh like consistency.
  4. 4Cover the masa and let it sit for five to ten minutes.
  5. 5Get your tortilla press ready and line it with plastic.
  6. 6Form balls of masa a bit smaller than a golf ball.
  7. 7Lay your ball of masa on the plastic and press it down slightly to prevent the edges from cracking.
  8. 8Slowly peel the tortilla off the plastic and put it on the preheated comal.
  9. 9Cook on medium heat and flip twice, for 40 seconds each time; during the last flip, press down a little to help them puff up.
  10. 10Once the tortillas have puffed up completely, remove from comal.
