Cajun Chicken Alfredo

Directions

  1. 1Lightly oil the chicken breast.
  2. 2Season the chicken breast with dried parsley, oregano, chili powder, garlic, paprika, and cayenne pepper.
  3. 3Salt the chicken directly.
  4. 4Get the pan hot, then add some oil.
  5. 5Lay the seasoned chicken into the hot pan.
  6. 6Flip the chicken once it has a nice crust.
  7. 7Transfer the chicken off to a sheet tray when it's still raw on the inside, and finish cooking in the oven.
  8. 8Lower the heat and deglaze the pan with lemon juice.
  9. 9Add butter and sauté minced garlic.
  10. 10Add tomato paste or Calabrian chilies and cook down for a couple of minutes.
  11. 11Add heavy cream and scrape down all the flavor from the pan, bringing it to a slight bubble.
  12. 12Toss in a little pasta water.
  13. 13Drop the heat to low and add a lot of Italian snow (Parmesan cheese).
  14. 14Introduce the al dente pasta to the sauce, ensuring every noodle is kissed with love.
  15. 15Slice the rested chicken breast into thin slices.
  16. 16Slide the sliced chicken on top of the beautiful pasta.

  • 0.5 tsp dried parsley

  • 0.5 tsp cayenne pepper

  • 1 tbsp lemon juice
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 pint heavy cream
  • 2 tbsp pasta water
  • 2 oz Parmesan cheese
  • 16 oz dry pasta (fettuccini)

Tips

  • Season the chicken directly for the exact amount of salt.
  • Cook the tomato paste or Calabrian chilies for a couple of minutes to take out the raw flavor.
