1In a bowl, combine water, soy sauce, salt, and sugar. Whisk to combine.
2Cut the turkey in half.
3Place the turkey in a container and cover it with the brine.
4Let it rest in the fridge for at least eight hours.
5In a small pot, combine soy sauce, ketchup, canned pineapple juice, rice wine vinegar, sesame oil, sriracha, brown sugar, garlic, ginger, smoked paprika, salt and pepper. Mix together over low heat.
6Move the combined sauce to a container and refrigerate.
7Remove the turkey from the brine, pat it dry, and baste it with the sauce.
8Use Kiawe wood to grill the turkey, turning it every 5–7 minutes for an hour, and let it sit for 20 minutes.
