Directions
- 1Remove salmon from its packet and pat it dry with a paper towel.
- 2Season the salmon with Cajun seasoning, oregano, and salt.
- 3Add the seasoned salmon, skin-side down, to a hot pan.
- 4Cook the salmon for 3-5 minutes until the skin is crispy, then flip and cook for a further 2 minutes.
- 5Transfer the salmon to a baking tray.
- 6Cook the salmon in the oven for 10 minutes.
- 7While the salmon is cooking, add pasta to salted boiling water.
- 8For the sauce, add sliced red onions to a pan and cook until softened.
- 9Add garlic puree to the onions and cook for a further minute.
- 10Add Cajun seasoning and oregano to the pan and cook until fragrant.
- 11Add tomato puree and cook for 2 minutes.
- 12Add vegetable stock, mix thoroughly, and simmer until reduced by half.
- 13Add reduced-fat garlic and herb soft cheese and mix until fully melted.
- 14Add the cooked pasta to the sauce and combine.
- 15Gradually add Parmesan cheese and mix until the sauce thickens.
- 16Serve the pasta on a plate.
- 17Top the pasta with the cooked salmon.

- 450 ml vegetable stock
- 150 g reduced fat garlic & herb soft cheese
- 30 g Parmesan cheese
