Cheesy beef taquitos with cilantro lime crema

Directions

  1. 1Heat oil in a large skillet over medium heat.
  2. 2Add the diced onion and cook for 3 4 minutes until softened and translucent.
  3. 3Add the minced garlic and sauté for 30 seconds until fragrant.
  4. 4Add the ground beef and cook, breaking it apart, until fully browned.
  5. 5Drain excess fat if necessary.
  6. 6Stir in tomato paste and cook for 1 2 minutes to enhance depth of flavor.
  7. 7Add garlic powder, smoked paprika, cumin, black pepper, and salt.
  8. 8Add water and simmer for 5 7 minutes, stirring occasionally, until the mixture thickens and most of the liquid has evaporated.
  9. 9Remove from heat and allow to cool slightly.
  10. 10In a mixing bowl, combine sour cream, mayonnaise, lime juice, cilantro, garlic powder, and salt.
  11. 11Whisk until smooth.
  12. 12Add water gradually until a pourable consistency is achieved.
  13. 13Refrigerate until ready to serve.
  14. 14Warm the tortillas slightly to make them pliable.
  15. 15Place 1 2 tablespoons of the beef mixture along the center of each tortilla.
  16. 16Sprinkle shredded cheese evenly over the filling.
  17. 17Roll each tortilla tightly and place seam-side down.
  18. 18Heat some oil in a skillet to 350°F.
  19. 19Fry taquitos in batches, beginning seam-side down, for 2 3 minutes per side or until golden brown and crisp.
  20. 20Transfer to a wired wrack to drain excess oil.
  21. 21Serve immediately, accompanied by cilantro lime crema.
