Fluffy Buttermilk Pancakes

Directions

  1. 1Add 1 1/3 cups or 160 grams of all-purpose flour into a large bowl, sift it.
  2. 2Add 1 teaspoon of salt, 2 tablespoons of sugar, and 1 tablespoon of baking powder. Sift it out.
  3. 3Whisk it up.
  4. 4Set aside.
  5. 5In a measuring cup, add 1 cup of buttermilk (240mL). If you don't have buttermilk, check the blog post for substitutions.
  6. 6Add 2 teaspoons (10mL) of vanilla extract.
  7. 7Warm the buttermilk mixture in the microwave for about 45 seconds.
  8. 8Add one egg into the buttermilk mixture and whisk it up.
  9. 9Add 4 tablespoons of melted butter.
  10. 10Turn on the cooktop on low heat to start heating up.
  11. 11Pour the wet ingredients into the dry and mix until just combined. Do not overmix.
  12. 12Butter the pan.
  13. 13Once the butter is melted, add about a third of a cup of batter to make smaller pancakes for the kids and some big ones for adults.
  14. 14Carefully flip the pancakes over. Don't use too much inertia.
