Directions
1
Add 1 1/3 cups or 160 grams of all-purpose flour into a large bowl, sift it.
2
Add 1 teaspoon of salt, 2 tablespoons of sugar, and 1 tablespoon of baking powder. Sift it out.
3
Whisk it up.
4
Set aside.
5
In a measuring cup, add 1 cup of buttermilk (240mL). If you don't have buttermilk, check the blog post for substitutions.
6
Add 2 teaspoons (10mL) of vanilla extract.
7
Warm the buttermilk mixture in the microwave for about 45 seconds.
8
Add one egg into the buttermilk mixture and whisk it up.
9
Add 4 tablespoons of melted butter.
10
Turn on the cooktop on low heat to start heating up.
11
Pour the wet ingredients into the dry and mix until just combined. Do not overmix.
12
Butter the pan.
13
Once the butter is melted, add about a third of a cup of batter to make smaller pancakes for the kids and some big ones for adults.
14
Carefully flip the pancakes over. Don't use too much inertia.
