Directions

  1. 1Add one and three-quarters cup of warm water, two teaspoons of instant yeast, about a tablespoon of olive oil, and about a teaspoon of honey to a bowl.
  2. 2Whisk the ingredients together.
  3. 3Incorporate two cups of bread flour (or all-purpose flour).
  4. 4Mix the dough.
  5. 5Add two teaspoons of salt.
  6. 6Add a third cup of flour and mix again.
  7. 7Cover the dough and let it sit for 15 minutes.
  8. 8Wet your hand and perform a set of four stretch and folds on the dough.
  9. 9Cover the dough and let it sit for another 15 minutes.
  10. 10Wet your hands and perform another set of stretch and folds.
  11. 11Cover the dough and let it rest for about an hour to an hour and a half.
  12. 12Line a cookie sheet with parchment paper and add lots of olive oil, spreading it evenly.
  13. 13Dump the dough onto the prepared cookie sheet.
  14. 14Gently stretch and fold the dough over itself a few times.
  15. 15Cover the dough, possibly with another pan or parchment paper, and let it spread out on its own for another hour.
  16. 16Help the dough spread out evenly on the cookie sheet if it hasn't fully spread on its own.
  17. 17Add extra olive oil as a topping.
  18. 18Add rosemary as a topping.
  19. 19Add flaky sea salt as a topping.
  20. 20Preheat the oven to 440 degrees Fahrenheit.
  21. 21Bake the focaccia in the preheated oven for 15 minutes.

Tips
