2In a separate cup, add 2 tablespoons of olive oil to 1 cup of warm water.

5Transfer the dough to a floured surface and knead for a few minutes until it takes shape, folding one end to the other and pushing through the middle.

7Place the dough ball back in the bowl, cover with a damp towel or saran wrap, and let it rise in a warm spot for 30 to 45 minutes or until it doubles in size.
8Once the dough is almost done rising, preheat your oven to 400 degrees Fahrenheit.
9Once the dough has doubled in size, push down in the middle.
10Cut the dough into six even pieces and roll each piece into a ball.
11Roll out each ball into a rectangle, roughly 10 inches long and 5 inches wide.
12For the pepperoni pizza hot pockets, spread pizza sauce on one half of the dough, then add low moisture mozzarella and pepperoni.
13For the ham and cheese hot pockets, add ham and cheese to one half of the dough.
14For the roast beef and cheddar hot pockets, add roast beef and shredded cheddar to one half of the dough.
15Take the top half of the dough and fold it over to the back of the dough.
16Pinch the sides with your thumb and then use a fork to seal the edges all together.
17Brush each hot pocket with a little egg wash.
18Sprinkle Italian seasoning on the pizza hot pocket and sesame seeds on the other hot pockets.
19Take a knife and cut a few slits into each hot pocket.
20Bake in the preheated oven at 400 degrees Fahrenheit for 15 to 18 minutes or until golden brown.
