Aloha Chicken and Rice Bake

Directions

  1. 1Add 1.5 cups of minute rice to your baking dish.
  2. 2Add 2 cubed chicken breasts to the baking dish.
  3. 3Add 1 diced red bell pepper to the baking dish.
  4. 4Add half of a diced red onion to the baking dish.
  5. 5Add one 20 oz can of pineapple tidbits with juice to the baking dish.
  6. 6Mix all the ingredients together in the baking dish.
  7. 7Combine 3/4 cup of chicken broth, 1/2 cup of coconut aminos or soy sauce, 1/4 cup of brown sugar, 3-4 minced garlic cloves, and some grated fresh ginger in a separate bowl.
  8. 8Whisk the sauce ingredients until beautifully combined.
  9. 9Pour the sauce over everything else in the baking dish.
  10. 10Cover the whole thing with foil.
  11. 11Bake in the oven at 425 degrees Fahrenheit for about 50 minutes.
  12. 12Carefully remove the foil from the dish after baking.
  13. 13Check the dish to make sure there isn't still too much liquid. If there is, put the foil back on and return it to the oven.
  14. 14Sprinkle fresh cut green onions on top to make it look fancy.
  15. 15Grab a bowl, fill it up, and serve.

Tips
