Stuffed Pork Tenderloin

Directions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a skillet over medium heat, melt the butter and sauté the onion for about 3 minutes until soft.
  3. 3Add the apple and cook for another 3 minutes until slightly tender.
  4. 4Remove from heat and mix in the breadcrumbs, shredded cheese, and parsley until combined.
  5. 5Place the pork tenderloin on a cutting board and carefully butterfly it lengthwise, opening it like a book.
  6. 6Gently pound it to about 1/2-inch thickness.
  7. 7Season the inside with salt, pepper, and thyme, then spread the stuffing evenly over the surface, leaving a small border.
  8. 8Roll the pork tightly and secure it if needed.
  9. 9Wrap the bacon around the rolled tenderloin.
  10. 10Heat olive oil in an oven-safe skillet and sear the pork for 2–3 minutes per side until the bacon starts to brown.
  11. 11Transfer to the oven and bake for 25–35 minutes or until the internal temperature reaches 145°F (63°C).
  12. 12Let it rest for 10 minutes before slicing and serving.

  • 1 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp butter
  • 0.25 cup onion
  • 1 small apple
  • 0.25 cup breadcrumbs
  • 0.5 cup shredded Provolone cheese
  • 1 tbsp fresh parsley
