Directions

  1. 1Cut the chicken wings into three parts.
  2. 2In a bowl, combine the chicken wings with 1 teaspoon of baking powder and 1 teaspoon of kosher salt.
  3. 3Grate zest from 3 lemons and bake on parchment paper at the lowest setting for 45-70 minutes until completely dried out.
  4. 4Use a food processor to grind the lemon zest into a powder.
  5. 5Combine the lemon zest powder with a pinch of garlic powder, a pinch of onion powder, a pinch of sugar, a pinch of celery salt, and a pinch of freshly ground black pepper.
  6. 6Melt 2 sticks of butter in a pan over medium heat until foam subsides and fats have solidified.
  7. 7Strain the butter through a fine-mesh sieve and cheesecloth to clarify it.
  8. 8Bake the air-dried wings for 45 minutes at 450°F or fry in oil at 375°F for 10 minutes.
  9. 9Whisk together 2 parts Frank's RedHot and 1 part melted clarified butter to make a basic Buffalo sauce.
  10. 10Toss the hot wings with lemon pepper seasoning and Buffalo sauce.
