Directions

  1. 1Place a pot on medium-low heat.
  2. 2Add 1 cup of coconut sugar to the pot.
  3. 3Cook and stir the sugar until it becomes sticky.
  4. 4Once the sugar is sticky, add 1/2 cup of water.
  5. 5Turn up the heat to bring the mixture to a simmer.
  6. 6Once it starts to simmer, add 3 small cinnamon sticks.
  7. 7Add a little bit of lemon skin to the pot.
  8. 8Add some lime skin to the pot.
  9. 9Add some orange skin to the pot.
  10. 10Add a dash of coriander to the pot.
  11. 11Add a dash of nutmeg to the pot.
  12. 12Let the mixture simmer for 5 to 10 minutes until it gets thick and all the flavors come together.
  13. 13After 10 minutes, take the pot off the heat.
  14. 14Strain the mixture into a glass jar, making sure no peels or other solids get into the syrup.
  15. 15Add 1 teaspoon of vanilla to the syrup.
  16. 16Add 1/2 teaspoon of bitters (without red dyes) to the syrup.
  17. 17Let the syrup cool for about 30 minutes.
  18. 18Add ice to a cup.
  19. 19Pour one part of the cooled syrup into the cup with ice.
  20. 20Pour three parts of sparkling water (preferably lemon-flavored, like Spindrift) into the cup with the syrup and ice.
  21. 21Stir the mixture in the cup.
