Papa Tea's Orange Chicken

Directions

  1. 1Trim off fat from chicken. Slice into 1/4 inch pieces.
  2. 2Season chicken with salt, white pepper, and garlic powder and mix well. Set aside and marinade for at least 30 minutes.
  3. 3In a large bowl, combine cornstarch, flour, baking powder, and water. Whisk together until smooth and thick consistency.
  4. 4In another bowl, mix together, orange juice, orange concentrate, sugar, vinegar and soy sauce.
  5. 5Add marinated chicken to the batter. Mix well until chicken is evenly coated.
  6. 6In a large wok, heat oil to 350°F.
  7. 7Fry battered chicken for 3-4 minutes or until the batter is firm and is a pale beige color. Remove from oil and strain. Let it cool.
  8. 8When ready to cook, fry par fried chicken for another 2-3 minutes at 400°F or until batter turns golden and crispy.
  9. 9In a pan heat the sauce mixture. Once sauce is boiling, add cornstarch slurry to thicken.
  10. 10Add double fried chicken pieces, toss well and until everything is evenly coated.
  11. 11Serve hot and enjoy!

  • 1.5 lbs chicken thigh, boneless, skinless
  • 0.5 tbsp kosher salt
  • 0.5 tbsp garlic powder
  • 0.5 tsp White or black pepper
  • 0.5 cup corn starch
  • 0.75 cup all purpose flour
  • 1.5 tbsp Baking powder
  • 0.75 cup water
  • 1.5 cup orange juice, sunny d works!
  • 0.25 cup Orange concentrate
  • 3 tbsp vinegar (distilled)
  • 4 tbsp sugar
  • 1 tbsp Soy sauce
  • 2 drops yellow food coloring
  • 2 tbsp water
  • 1 tbsp cornstarch
  • Frying oil, I like using peanut oil
