Add boneless skinless chicken thighs to a slow cooker along with garlic, Worcestershire sauce, Dijon, beef bone broth, and rosemary.

Cook your onions over high heat until they've released all their water, then cook until caramelized.

Pour over beef bone broth, Worcestershire sauce, a bit more Dijon.

Boil that over high heat until all the water's evaporated to create jammy, deeply brown caramelized onions.

For the cheese sauce, add cottage cheese, a bunch of Gruyere, Parmigiano Reggiano, about three quarters of your caramelized onions, and some milk.

Once the chicken is done, break it up with a metal spoon.

Add in about a cup of pasta water and some half-cooked pasta.

Pour over your sauce.

Cover and cook for about 15 to 20 more minutes to let it finish cooking.

Top off with chives and the rest of your caramelized onions, and then enjoy.
