Directions

  1. 1Dice chicken breast, broccoli, red potatoes, carrot, and red onion.
  2. 2Drizzle extra virgin olive oil over the diced ingredients.
  3. 3Add a touch of garlic powder to the ingredients.
  4. 4For the sauce, combine 2 tablespoons of whole grain mustard, 2 tablespoons of Dijon mustard, and 1 tablespoon of apple cider vinegar.
  5. 5Add 1/4 cup of honey to the sauce, using a cooking spray in the measuring cup to prevent sticking.
  6. 6Pour the sauce mostly over the chicken, but also drizzle some over the vegetables.
  7. 7Mix and toss everything together: vegetables, chicken, and sauce.
  8. 8Season with salt and pepper.
  9. 9Preheat the oven to 400 degrees Fahrenheit.
  10. 10Cook for about 30 minutes.
  11. 11Halfway through cooking, stop and toss the ingredients in the oven to ensure even coating and cooking.
