High Protein Cheesy Beef Taco Potato Bowls

Directions

  1. 1Slice your potatoes into small cubes, then add taco seasoning mix with olive oil.
  2. 2Mix well and oven or air fry on the settings listed on screen.
  3. 3Make the Chipotle spicy sauce with low fat yogurt, light mayo, Chipotle chili paste, hot sauce, squeeze of honey, salt, paprika, and garlic powder.
  4. 4Blend the sauce until completely smooth and creamy.
  5. 5Bottle the sauce up and store in the fridge for weeks.
  6. 6Make the fresh salsa with chopped tomatoes, red onion, bell peppers, coriander, the spice blend, and lime juice.
  7. 7Mix the salsa until well combined.
  8. 8Get a pan on high heat, add grass-fed butter and cook the beef for 8 minutes.
  9. 9Add tomato paste and more taco seasoning mix to the beef.
  10. 10Mix and cook the beef until golden brown.
  11. 11Add low fat cheese to the beef.
  12. 12Equally distribute into four servings.

  • 75 g Chipotle Chilli Paste (Brand: Waitrose)
  • 30 g Hot Sauce
  • 30 g Honey
  • Salt
  • Paprika
  • Garlic Powder
  • 3 Large Tomatoes Chopped
  • 1.5 Large Red Onion Chopped
  • 0.75 Red & Green Bell Peppers Chopped
  • 1.5 Big Handful Coriander chopped
  • Salt
  • Pepper
  • Garlic
  • Cumin
  • Paprika
  • 1.5 Whole Lime Juice
  • 1200 g Lean Minced Beef (Topside Beef)
  • 30 g Tomato Paste
  • Taco Seasoning Mix
  • Grated Mozzarella or any low fat cheese
  • 22.5 g Grass Fed Butter for cooking

Tips

  • Season the potatoes thoroughly and mix till well coated. Make sure you don’t over cook them.
  • Make the sauce in advance and store in the fridge to use for any other meal.
  • Store the Pico/Salsa in a container in batches.
  • Cook the beef till brown then add all the ingredients. You can add a little water to add moisture if it’s too dry.
  • Reheat the potatoes and beef only. You can store the salsa separately to make it easier.
