Directions

  1. 1Drizzle Bachan’s on the chicken thighs.
  2. 2Season both sides of the chicken thighs generously with a BBQ rub.
  3. 3Let the chicken marinate uncovered in the fridge for 1 hour or overnight.
  4. 4Insert the Meater Pro Duo to watch the internal temp while the chicken thighs smoke.
  5. 5Preheat the smoker to 250°F using Cherry wood.
  6. 6Place the chicken thighs on the smoker indirect of the heat for about 1 hour.
  7. 7While the chicken smokes, assemble the Lemon Pepper sauce in a sauce pan by combining all ingredients (butter, hot honey, lemon juice, lemon zest, roasted garlic).
  8. 8Cook the sauce over medium heat and mix thoroughly until it thickens.
  9. 9Increase the temperature of the smoker to 350°F for 15-20 minutes.
  10. 10Glaze the chicken thighs with Hot Honey.
  11. 11Remove the chicken once it reaches an internal temperature of 170°F.
  12. 12Brush the lemon pepper sauce on both sides of the chicken thighs.
  13. 13Garnish with lemon zest and black pepper.
  14. 14Serve and enjoy!
