2 cups spring mix lettuce
1.5 cups cubed seedless watermelon
0.5 english cucumber, sliced and halved
0.25 cup crumbled feta
0.25 cup fresh blueberries, infused with lime + mint*
4 stems fresh dill, roughly chopped
2 tablespoons coarsley chopped mint leaves
1 tablespoon pine nuts
1 taste Kosher salt
1 balsamic glaze for drizzle
1 fresh lime wedges

Tips
Soak blueberries in lime juice and fresh mint overnight for enhanced flavor. If short on time, use plain fresh blueberries.

Choose watermelon with a dull exterior, a larger yellow ground spot, symmetry, and a brown dried stem for optimal flavor and juiciness.
