Dan-O-Myte Shrimp Ceviche

Directions

  1. 1Juice four limes, two lemons, and two oranges.
  2. 2Get a new cutting board for the shrimp.
  3. 3Remove all shells and tails from the shrimp.
  4. 4Cut the shrimp into small pieces.
  5. 5Add the juices of the oranges, lemons, and limes to a pot and bring them to a boil.
  6. 6Add 2 tbsp of Dan-O’s Chili Lime to the boiling juices.
  7. 7Add the shrimp to the boiling juices and turn off the heat.
  8. 8Stir the shrimp to ensure they are well coated and submerged in the juice.
  9. 9Transfer the shrimp mixture to a bowl, ensure shrimp is submerged, and place it in the freezer for about 30 minutes to chill and finish cooking.
  10. 10Put on new gloves.
  11. 11Cut the mango by slicing around the pit and using a pint glass to separate the flesh.
  12. 12Dice the mango slices and add them to a large bowl.
  13. 13Dice four Roma tomatoes and add them to the bowl.
  14. 14Dice two jalapenos and add them to the bowl.
  15. 15Cut off the leaves of the cilantro, get rid of the thick stems, and finely chop the leaves and remaining small stems.
  16. 16Add the chopped cilantro and stems to the bowl.
  17. 17Cut off the stem side of one onion, slice it in half, remove the outer layer, slice about three quarters of the way, and then dice it.
  18. 18Add the diced onion to the bowl.
  19. 19Remove the shrimp mixture from the freezer after 30 minutes.
  20. 20Add the shrimp mixture to the bowl with the diced vegetables.
  21. 21Mix all ingredients together gently.
  22. 22Sprinkle generously the remaining Dan-O’s Chili Lime and Dan-O’s Chipotle.
  23. 23For best flavor, refrigerate for an additional 30 minutes before serving.

  • 4 Roma tomatoes, diced
  • 2 jalapeños, diced
  • 0.25 bushel cilantro, chopped (include stems)
  • 1 onion, diced
