1Place cherry tomatoes and garlic in an air fryer with a little olive oil, and cook at 200 degrees for 45 minutes.
2Caramelize sliced onions in a pan with a splash of olive oil.
3Add sugar to the onions and stir for 2 minutes.
4Extract roasted garlic cloves and put them in a blender with the roasted tomatoes, caramelized onions, toasted hazelnuts, hot sauce, mustard, ricotta, and a little pasta cooking water.
5Blend all ingredients until smooth.
6Add fresh basil to the blender and blend again.
7Mix the sauce with cooked spaguetti.
8Garnish with fresh basil leaves and a little bit of lemon zest.

Tips
Hot sauce is optional.
The sauce is done when it looks like 'chapapote' (a thick, smooth emulsion).
