3For the secret sauce, mix reduced sugar ketchup, light mayo, American mustard, chopped chives, honey, and black pepper together until completely smooth.
4In a pan on medium heat, add cooking spray and sliced onions.
5Stir the onions until soft.
6Add balsamic vinegar and brown stevia to the onions.
7Stir for another 6 minutes until the onions are nice and brown.
8Clean out the pan, add more cooking spray.
9Place a beef ball in the pan and smash it down with a burger press.
10Cook the patty on high heat until it gets a crispy sear on both sides.
11Place a slice of light cheese on top of the patty and let it melt.
12Repeat for one more patty and stack it on top of the first patty.
13To assemble, take a brioche bun, flip the base over, and add a light cheese slice.
14Add 2 tsp of the secret sauce.
15Place the double smash patty on top of the sauce.
16Add caramelized onions.
17Add more secret sauce (1 tsp) and the top bun.
18Toast the assembled patty melt in the pan for 1-2 minutes on each side until nice and crispy.

Tips
When toasting the patty melts in the pan, use medium to low heat and be careful when flipping over. You can also use a plate over the top to help flip.
