  1. 1In a bowl, mix together the dry ingredients: all-purpose flour, sugar, salt, baking powder, and baking soda.
  2. 2Whisk the dry ingredients to ensure there are no pockets of any one ingredient.
  3. 3In a separate container, mix the wet ingredients: milk, vegetable oil, vanilla extract, apple cider vinegar, and eggs.
  4. 4Whisk the wet ingredients until well combined.
  5. 5Pour the wet ingredients into the bowl with the dry ingredients.
  6. 6Fold the wet and dry ingredients together until just combined. DO NOT OVERMIX. Lumps are okay.
  7. 7Place a dollop of whipped salted butter on the preheated griddle and spread it around.
  8. 8Use a berry spoon (or any utensil that produces the desired pancake size) to scoop the pancake batter onto the griddle.
  9. 9Do not stir the batter while scooping. Pick from the side, leaving the bubbles intact.
  10. 10Cook pancakes until bubbles begin to pop on the surface.
  11. 11Use a plastic spatula to flip pancakes away from you. DO NOT press down while flipping.
