Directions

  1. 1Pour the warm milk into a small bowl.
  2. 2Add 1 tbsp of the granulated sugar & sprinkle the yeast overtop.
  3. 3Stir & rest for 5-7 mins, until frothy.
  4. 4In a large bowl, whisk together the flour & salt.
  5. 5Pour the yeast mixture into the bowl of a stand mixer.
  6. 6Add the rest of the sugar, melted and cooled butter, eggs, vanilla & 2 cups (240g) of the flour mixture.
  7. 7With the dough hook attachment, mix on low speed for 1 min, until barely combined.
  8. 8Rest 5 mins.
  9. 9Add the rest of the flour & mix on medium speed for 5-7 mins, until the dough is elastic & smooth.
  10. 10If the dough seems a little too sticky, you can add 1 tbsp more flour at a time.
  11. 11Transfer dough to a lightly oiled bowl.
  12. 12Cover & rise in a warm environment for 1-1.5 hours, or until doubled in size.
  13. 13In a large saucepan over medium-high heat, add all of the apple filling ingredients except for the cornstarch & water.
  14. 14Cook until the apples soften, stirring occasionally (~10 mins).
  15. 15Mix together the cornstarch & water in a small bowl to create a slurry.
  16. 16Pour the slurry into the apple mixture, stir & cook until the mixture thickens (1-2 more mins).
  17. 17Remove from the heat & stir in the vanilla.
  18. 18Set aside to cool COMPLETELY.
  19. 19Cut out 8 medium-sized squares or 12 small squares of parchment paper & place baking sheets.
  20. 20Sprinkle each square w/ flour.
  21. 21Once the dough is doubled, turn it onto a floured surface.
  22. 22Form it into a rectangle using your hands, then roll it out into a 12x16” rectangle.
  23. 23Spread the cooled apple filling across the entire surface of the dough.
  24. 24Sprinkle extra flour (1/4 cup; 30g) all over the top of the apple filling.
  25. 25Fold each short side of the dough to meet in the middle and enclose the apple filling.
  26. 26Gently pinch and push the seem and edges together.
  27. 27Cut the dough into a grid pattern, making 1” pieces, cutting across the dough lengthwise and then widthwise.
  28. 28Then, toss & gather the dough bits, and cut more from different directions.
  29. 29Divide the dough & form into 8 large or 12 small round fritters.
  30. 30Use your hands to form each fritter into a ball, compacting them together, adding more flour if needed.
  31. 31Add a good sprinkle of flour to the tops of each fritter, flip them & sprinkle more flour on the other side.
  32. 32Transfer to the parchment paper squares.
  33. 33Loosely cover w/ plastic wrap & rest while the oil heats.
  34. 34Fill a large, heavy-bottomed pot or Dutch oven with oil, filling ~2” in the pan.
  35. 35Heat on medium-high until it reaches 360F-375F.
  36. 36Line a wire rack w/ a thick layer of paper towels.
  37. 37Once ready, carefully & slowly place 1-2 fritters into the hot oil (w/ the parchment paper on).
  38. 38After 1 min, pull the parchment paper away.
  39. 39Fry for 2-3 mins on each side, until deeply golden brown.
  40. 40Use a slotted spoon to remove the fritters from the oil & set on the rack with paper towels.
  41. 41Repeat.
  42. 42Make the glaze by whisking together all of the ingredients in a bowl.

  • 0.5 tsp apple pie spice
  • 1 tbsp cornstarch
  • 0.25 cup water
  • 1 tsp vanilla extract
  • 1.5 cups powdered sugar
  • 6 tbsp salted butter, browned
  • 0.33 cup maple syrup
  • 2 tbsp milk of choice
  • 1 tsp vanilla extract
  • 1 Pinch salt
