Directions

  1. 1Add warm water, instant yeast, and honey to a bowl.
  2. 2Whisk the mixture.
  3. 3Add all-purpose flour to the bowl and mix with a rubber spatula until a shaggy dough forms.
  4. 4Cover the bowl and let the dough sit for 10 minutes.
  5. 5After 10 minutes, add salt and olive oil to the dough.
  6. 6Perform the first set of stretch and folds: grab one end, stretch and fold, then turn the bowl.
  7. 7Cover the dough and let it rest for 30 minutes.
  8. 8Repeat the stretch and fold and 30-minute rest process three more times for a total of four sets.
  9. 9After the last set of stretch and folds, let the dough rest in a warm area for 1 hour.
  10. 10Flour a surface and dump the dough directly onto the flour.
  11. 11Carefully stretch the dough out into a rectangle or square-ish shape.
  12. 12Add flour to the top of the dough.
  13. 13Cut the dough once vertically and twice horizontally.
  14. 14Place the cut dough pieces onto a baking sheet with parchment paper.
  15. 15Let the dough pieces rest for a final 30 minutes.
  16. 16Preheat the oven to 450 degrees F.
  17. 17Place the baking sheet with ciabatta rolls into the oven.
  18. 18Add some ice cubes to a separate hot baking sheet and place it in the oven to create steam for a crispy crust.
  19. 19Bake for 20-25 minutes.
