1Mix together 12 eggs, some milk, salt, and pepper in a bowl.
2Add the egg mixture to a lined sheet pan and add in bell peppers and spinach.
3Bake the eggs at 350°F for around 17 minutes or until they're set.
4At the same time, heat up breakfast patties for a little more protein.
5Once the eggs are done, cut them into 12 squares or use a cup to cut out rounds to fit on your English muffins.
6Leave the oven on to quickly toast your English muffins for a few minutes with butter.
7Start with your English muffin, then add your egg, patty, and cheese.
8Wrap the sandwiches using parchment paper or whatever is available to you.

Tips
You can refrigerate them for a few days or you can freeze them for up to a month.
To reheat from frozen: Thaw overnight in fridge. Remove from parchment paper and wrap in paper towel. Microwave on high for 60 seconds and let stand for 2 min.
