1Add garlic cloves, onion, bay leaves, oregano, thyme, cumin seeds, rosemary, coarse salt, black pepper, lime juice, and orange juice to a blender and blend until smooth.
2Pat the beef chuck dry and cut into large chunks. Season well on all sides with salt and pepper.
3Cover the bottom of a skillet with avocado oil and set over high heat to warm up. Preheat your oven to 300°F.
4Sear the beef chunks in the hot skillet for 3 minutes per side.
5Pour the blended marinade over the seared beef.
6Add the Mexican Coke to the pan.
7Cover the skillet completely with foil and cook in the preheated oven.
8Remove the meat from the pan and shred with tongs on a baking sheet.
9Drizzle some of the pan juices over the shredded beef.
10Return the baking sheet to the oven to broil.
