Potato, Cheese, and Onion Pie

Directions

  1. 1Thinly slice some potatoes.
  2. 2Arrange the potato slices on a baking sheet lined with parchment paper.
  3. 3Spray the potato slices with oil and season with pepper.
  4. 4Bake the potatoes until they soften.
  5. 5Melt butter in a pan.
  6. 6Add grated onion to the pan.
  7. 7Add spring onion to the pan and fry until softened.
  8. 8Add flour to the pan with the onions.
  9. 9Stir in milk to create a sauce.
  10. 10Add grated cheddar and red Leicester cheese to the sauce.
  11. 11Add a spoonful of English mustard to the cheese sauce and mix well.
  12. 12Grease a pie dish with butter.
  13. 13Line the pie dish with shortcrust pastry, trimming any excess.
  14. 14Add a layer of the cheese and onion sauce to the bottom of the pastry-lined dish.
  15. 15Arrange a layer of baked potato slices on top of the cheese sauce.
  16. 16Add another layer of cheese and onion sauce on top of the potatoes.
  17. 17Repeat layering the potatoes and cheese sauce until the filling reaches the top of the pie dish.
  18. 18Cover the pie with puff pastry.
  19. 19Crimp the edges of the pastry with a fork to seal the pie.
  20. 20Trim any excess pastry from the edges.
  21. 21Brush the top of the pie with egg wash.
  22. 22Make a few steam holes in the top of the pie with a knife.
  23. 23Bake the pie until it's golden and flaky.
  24. 24Let the pie rest before slicing.
