Directions

  1. 1Take the boneless meat and cut into very thin, bite-sized pieces.
  2. 2Now time to marinate the meat with the yogurt, papaya, ginger, garlic, and green chili paste.
  3. 3After that, add salt, cumin and coriander powder, red chili powder, citric acid, garam masala, ground black pepper, ground nutmeg and mace, turmeric, lemon juice, and mustard oil.
  4. 4Mix everything well together and leave to marinate.
  5. 5But for the extra and crunchy flavor, take some thinly sliced onions and fry until golden brown.
  6. 6Take out and dry until crispy.
  7. 7After, add in a blender and make a powder.
  8. 8Add to the marinated mixture and mix until well combined.
  9. 9Cover the bowl and let it marinate in the refrigerator overnight.
  10. 10Next day, take out and time to make these kababs.
  11. 11Thread the Bihari boti onto the skewers, preheat the charcoals, and grill the skewers on a medium heat, turning occasionally until the meat is cooked through and tender.
  12. 12This will take around 18 to 20 minutes, depending on the thickness of the meat.
