Directions
- 1Add cooked fusili pasta to a large bowl.
- 2Add cooked ground turkey (or ground meat of choice) seasoned with low sodium taco seasoning to the pasta.
- 3Add rinsed and drained black beans to the bowl.
- 4Add chopped red bell pepper to the bowl.
- 5Add sliced cherry tomatoes to the bowl.
- 6Add sliced green onions to the bowl.
- 7Add corn kernels to the bowl.
- 8Add chopped fresh cilantro to the bowl.
- 9Pour the yogurt dressing over all the ingredients in the bowl.
- 10Mix all ingredients thoroughly in the bowl until well combined.
- 11Portion the taco pasta salad into glass containers for meal prep.
- 12Seal the containers with lids.

- 2.5 cups fusili
- 1 lb ground turkey
- 1.5 tablespoon olive oil
- 1 package low sodium taco seasoning
- 1 can (540ml) lentils rinsed and drained
- 1 cup corn kernels
- 0.25 cup fresh cilantro chopped
- 1 can (540ml) black beans rinsed and drained
- 1 pint cherry tomatoes sliced
- 3 green onions sliced (both the whites and greens)
- 0.75 cup plain Greek yogurt (2% works best)
- 0.25 cup mayonnaise
- 2 limes just the juice
- 1.5 tablespoon low sugar BBQ sauce (Stubb's is my favourite)
- 0.5 teaspoon chili powder
- 0.5 teaspoon cumin
- 0.25 tsp paprika
- 0.5 teaspoon salt
- 0.125 teaspoon black pepper
