Directions

  1. 1Brown butter and let cool slightly.
  2. 2Whisk with sugars with the browned butter until glossy, then add eggs and vanilla.
  3. 3Sift in the dry ingredients until just combined, then fold in chocolate.
  4. 4Chill for at least 1 hour.
  5. 5Preheat oven to 350°F (175°C).
  6. 6Line an 8x8 pan with parchment.
  7. 7Melt butter with chocolate chips.
  8. 8Whisk in olive oil and cocoa powder.
  9. 9In another bowl, whisk sugars, eggs, and vanilla.
  10. 10Combine with chocolate mixture, then fold in flour until just mixed.
  11. 11Pour half the brownie batter into the pan and spread evenly.
  12. 12Add chunks of cookie dough across the surface (don’t cover fully).
  13. 13Pour remaining brownie batter over top.
  14. 14Finish with more cookie dough pieces pressed lightly on top.
  15. 15Lastly, top with the chocolate chunks to your liking.
  16. 16Bake for 30–40 minutes, until edges are set and center is slightly soft.
  17. 17A toothpick should come out with moist crumbs, not wet batter.
  18. 18Keep baking if needed.
  19. 19Cool completely before slicing.

  • 2 tbsp olive oil
  • 2 eggs
  • 0.75 cup flour
  • 0.5 cup brown sugar
  • 0.25 cup white sugar
  • 1 tsp vanilla
  • 1 cup chocolate chips (melted)
  • 0.25 cup cocoa powder
  • 3 oz semi-sweet chocolate chunks
